When talking about how to incorporate more veggies into your diet, one of the tried and true trick’s that I always mention is to hide them! If you are a parent you probably know this one well, or perhaps you have vivid childhood memories of a parent trying to pull trick over on you!
Either way, most Americans could stand to get more veggies, especially the cruciferous ones, into their diet. So why not disguise them under sweet blueberries and aromatic cinnamon. Plus, frozen cauliflower also makes smoothies super thick and creamy too! The banana adds extra creaminess and sweetness but your can sub for dates if you prefer as well.
This smoothie pretty much packs it all in, fruits, veggies, fiber, protein, antioxidants and tons of other phytonutrients. It makes a great breakfast, meal replacing smoothie or post workout smoothie too!
Blueberry Muffin Smoothie
Summary of Recipe
- 3/4 cup blueberries
- 3/4 cup frozen cauliflower
- 1 ripe banana
- 1 cup plant milk
- 1 teaspoon cinnamon
- 1/2 tbsp vanilla
- 1 tbsp flaxseed
- 3 tbsp hemp hearts
Simply blend all ingredients in a blender until creamy and enjoy!
You can use raw frozen cauliflower or steamed and frozen cauliflower for this smoothie. Steamed cauliflower is gentler on digestion but will make the cauliflower flavor stronger than raw.
